CLEAN Pumpkin Muffins - 21 Day Fix Approved

I'm not sure WHHHY but muffins have been calling my name lately! haha!! Im guessing its because its almost Fall and the "comfort foods" are becoming more appealing? Well  - whatever the reason, I can only give in to the CLEAN versions of these comfort foods because we ALL know what will happen....if you have ONE bite, you have 10 and they can quickly ADD UP! ;) 


So, because PUMPKIN in such a favorite, here is a Pumpkin Muffin recipe that is sure to please AND is 100% clean -- so you can enjoy it with less guilt! ;)





What You Need- Makes 12
  • 2 eggs
  • 1/4 cup canned pumpkin puree
  • 1 large banana
  • 1/4 cup Pb2 (powdered peanut butter)
  • 1/4 cup honey
  • 2 scoops of Vanilla Shakeology OR chocolate Shakeology (both taste great)
  • 1/2 tsp baking powder
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp sea salt

Directions-
  1. Preheat over to 350 
  2. Prepare 12 muffin cups  with paper or simply coat the muffin tin with PAM coconut oil spray 
  3. Place eggs, pumpkin,  peanut butter, honey and banana in blender and blend for 30 seconds or until smooth.
  4. Next, add in Shakeology, baking powder, pumpkin pie spice, and sea salt. Blend until smooth.
  5. Divide the batter among the 12 muffin cups
  6. Bake 18-20 minutes, or until golden brown and tester inserted into the center comes out clean. Let cool.
