21 DAY FIX Approved -- Quinoa Mac 'n Cheese

Yet amazing coach, Andrea Maranville  created a DELICIOUS, healthy and clean recipe!! Who DOESNT LOVE mac and cheese?? I know I do!! I also know that it doesnt really do anything for me expect to leave me feeling guilty afterwards because of the "brick" thats in my belly!! haha!! 

When I was pregnant with my first daughter, I LOVED to eat mac & cheese! It is such a comfort food!! Im SO glad that now I can turn to THIS recipe instead!! 

QUINOA in place of the pasta
No butter or oils 
CHEESE included 

It ended up having more of an au gratin flavor than Mac and cheese but it was delish!! 


1 C quinoa
1/2 m. Onion
1/2 C. Chedder cheese
1/2 C. Parmesan cheese
1/2 t. Salt
1/4 t. Pepper
1/8 t. Nutmeg
1.5 C almond milk
2 T. Wheat flour


Simmer 2 C water and 1 C quinoa until liquid absorbs and quinoa is fluffy.

Saute onion till translucent

Add flour, salt & pepper, nutmeg and mix add small amount of milk until thick, slowly add remaining milk wisking constantly.

Add cheese and whisk until blended.

Pour over quinoa and mix.
Place in casserole dish and bake at 350 for 20-30 minutes!

Makes 9 Servings. 

21 DAY FIX SERVINGS -- measure in YELLOW, with an additional 1 blue, 1/4 green, 1 teaspoons per each yellow container count.
