Blueberry Pancake Muffins -- 21 Day Fix Approved!

Im not sure about you -- but I LOVE pancakes and baked goods!! haha

Being that I have Ulcerative Colitis, I have learned that regular muffins from a bakery really hurt my stomach and I cannot digest them I needed an alternative -- especially now in the colder months!! We all want some yummy, warm, gooey muffins with our coffee....right? ;) PLUS -- these are SO easy to make!!

I found this recipe in a 21 Day Fix group that I am a part of -- they look DELICIOUS and HEALTHY!! They are not only 21 Day Fix approved but they are also TODDLER-approved!! WINNING!! I can feel GOOD about giving my three year old these verses a bakery-bought muffin......


*1 1/2 cups almond flour
  1. *1/4 cup plain Greek yogurt
  2. *2 T coconut oil, melted
  3. *3 eggs
  4. *2 T pure maple syrup OR honey
  5. *1/2 tsp pure vanilla extract
  6. *1/4 tsp sea salt
  7. *1/2 tsp baking soda
  8. *1 cup Fresh or Frozen Berries - blueberries, raspberries, blackberries - you pick! 

  1. Preheat oven to 350 degrees and lightly grease a mini muffin pan.... I use either coconut oil or coconut oil cooking spray.
  2. Put all ingredients (except berries) into a blender or food processor and blend until smooth. The batter should be thick.
  3. Only fill the muffin cups 1/3-1/2 full and place berries on top. As the muffins bake, the berries will fall into each muffin. 
  4. Place tray in the oven for 7-10 minutes until golden brown on top and a fork comes out of the center of the muffin clean
  5. Let cool and ENJOY!!

  1. 4 mini muffins = 1/2 Yellow, 1 Blue, 1/4 Red, 1/4 Purple, 1 tsp
  2. My mini muffin tin has 24 muffin cups


2 "regular-sized" muffins would be the same containers
