21 Day Fix Breakfast - Egg Muffins

  I honestly cannot say ennough about the 21 Day Fix! I began my journey with it last February and STILL continue to follow the meal plan because that is when I feel the best and have the most energy! Dont get me wrong.......there are days when I just want to eat outside of it -- BUT I always end up feeling like crap and go right back to the plan!

When I can have something that is convenient and ready to eat on this plan -- it makes it even easier to follow!! For all of you who work outside the home, having something prepared in advance will make you THAT much more successful on the 21 Day Fix!

Here is a great option for breakfast that you can take with you! Clean and healthy EGG MUFFINS!

These are 21 Day Fix "approved" and will keep you full for 2-3 hours. Pair with an extra veggie or fruit....even a yellow of toast or oatmeal and you will be good to go!



 
 

 
 
Ingredients:
 
6 Egg Whites (1 egg white per muffin)
Veggies: 
(Use what YOU prefer) Some ideas are:
DicedZucchini
Diced Squash
Diced Red, Green or Yellow Pepper
DicedTomato
Diced Onion ir garlic
Cooking Spray ((I like the coco oil spray))
Reduced Fat Shredded Cheddar


DIRECTIONS: 

1. Preheat oven to 350 and spray your muffin pay with cooking spray and be sure its coverd completely.

2. Put your diced veggie mixture in the bottom of each muffin cup (about 1/4 full)

3. Cover veggies with 2 tbsp of cheese

4. Place one egg white in each muffin cupto cover the veggies and cheese

5. Use a fork and whisk lightly to ensure that all ingredients are mixed.

6. Bake at 350 for about 20 minutes, or until egg white has hardened.

7. Remove from muffin tin and ENJOY!!! 

FOUR of these babies = 1/2 RED // 1/2 GREEN // 1 B // 1 tsp if following the 21 Day Fix
