Greek Yogurt Pancakes -- CLEAN & HEALTHY

Mmmm..mmm...mmmmmmmm PANCAKES!!!! My fav, breakfast comfort food. When I was little, my dad's were the BEST!! So buttery, warm and delicious!!!! Nowadays if I had them, my stomach would ache and I would feel like poo afterwards -- and I would be hungry an hour later!! lol

Here is a clean version for a delicious alternative! Enjoy!!!

INGREDIENTS:

1½ cups  almond or coconut flour (or whole wheat flour)
2 teaspoons of baking powder
2 tablespoons honey
½ teaspoon salt
2 tablespoons applesauce in place of oil
1 teaspoon vanilla (or ½ teaspoon almond extract)
¾ cup plain greek yogurt
¾ cup milk
2 eggs

DIRECTIONS:
*Preheat a pan or griddle to 325 (medium heat). In one bowl, whisk together flour, baking powder, honey, and salt. Mix together the oil, eggs, vanilla, and greek yogurt in a *separate* bowl.

*Add dry ingredients to wet ingredients and stir. Stir in milk until all ingredients are combined & the consistency is to your liking. I like them fully blended.

*Grease griddle (I use coco oil) and pour ¼  or  ⅓ cup batter onto the griddle. I actually use a measuring cup to pour batter.

*Cook for about 2 minutes or until edges begin to look "dry" and bubbles form in the batter. I use a thin spatula for flipping the cakes.

*Once both sides are golden brown, transfer to a plate. I keep the oven on a low temp to keep them warm while the others cook (thanks to Dad!).

*Top pancakes with fruit, jam or honey! ENJOY!!
